Our 100% estate grown and bottled 2018 Cabernet Sauvignon displays intense dark fruit flavors followed by a wonderful note of herbs and cloves. This wine possesses classic Cabernet charm with traditional aromas. My favorite part is the high-toned structure, well-integrated oak, and tannic finish. This wine is a slight blend, featuring 90% Cabernet Sauvignon and 10% Cabernet Franc, it remains soft and supple on the palate, with dense red fruit, baking spice and just a suggestion of New French Oak. Overall, this wine is generously expansive and opulent, round in the mouth, with a focused center of black cherry, licorice and olive. The rich fruit is complemented by notes of cranberry pie crust, and a dusting of cocoa powder. This wine is lengthy and structured and will be tasting its best in 2022 – 2030.

Production notes

We harvest our Cabernet grapes overnight and the fruit is processed early the next morning. We do not crush our fruit, we simply destem the berries and whole berry ferment the grapes in both new 500L Puncheon barrels and 1-ton macro bins. These small fermentations allow us to use a combination of yeasts that in turn derive unique characteristics in the resulting wine. The fermenting wines are kept at 60-75 degrees, insuring a slow and steady and heathy alcoholic fermentation. We pressed the fermented skins at low pressure followed by settling, racking and barrel aging. The barrels were racked just one time post Malo-Lactic fermentation, and followed by topping off every six weeks. This wine aged for 18 months in a combination of new and used wine barrels.

Sculpterra Winery is known for big, bold, fruit-forward Cabernet wines, and this vintage does not disappoint! Our vines, planted in 1995, are now hitting their best years, each year yields consistent flavors that are balanced, lush and lengthy. This wine combines four different vineyards of Cabernet Sauvignon and one vineyard of Cabernet Franc. Our hilltop Cabernet Sauvignon block features sandy soils, east-west oriented rows and sloped drainage, creating a more stressful condition for the vines, thus the wine is dark, concentrated and tannic. The valley floor Cabernet Sauvignon vines are planted on rocky, stony soils, with north-south oriented rows, and rich fertile soil, therefore we irrigate much less in the valley as the soils retain more rain water than the hillside plots. Our vines are hand manicured, from pruning, shoot thinning, weeding, and suckering. We limit the crop load to three tons per acre, therefore the berries are petite, thick skinned, and dark.
